I hade some leftover pumpkin in my fridge this week so I needed to make something with it. I remember seeing some cookies on the Martha Stewart website. So after I got my children to school Bhavik and I watch the video clip on how to make these delicious and very easy cookies. It is like eating pumpkin cheesecake. The soft pumpkin cookies filled with a creamy cream cheese frosting has been hard for me to keep from eating more than one. Okay so I ate two.
